Nowadays, I shoot in full manual mode (either Program, or Shutter Speed Priority) though when I started out in digital photography, I had my PowerShot A540 on Auto mode for a while
All of the above... Manual, mostly, but I do switch into Aperture, Program, Shutter modes often enough to say I use them too. I rarely ever use Auto, but I have once or twice.
NEF is essentially RAW, yes. I've been told that there are few modifications to the NEF format that makes it superior over RAW, but I don't know what they are.
I shoot in bunches of modes cause I'm always looking for that perfect shot that isolating myself to a particular mode will never give me.

But yeah, it's always good to shoot in a bunch of modes, just so you know how they all work.

However, during those high stress/one shot at the shot times (ie. weddings or event photography) I'll usually go with aperture.
I'm just like you; I only really do automatic when I'm just shooting to capture moments or at events and things.
Automatic for me, because I don't have a 'real' Camera.
